Hello lovely readers, and welcome to my delightfully random (and newly redesigned) blog! This is me, Erin (in the crazy leggings in half Navasana) here to share healthy vegetarian and vegan recipes (oh who am I kidding there will be desserts too!), yoga, photography, travel, and ways to stay healthy when your job keeps you on the road.
In 2011 I transferred to a new university where I started over with life and learned that the very first step in being your happiest is learning to accept that you are perfect just the way you are! It's one of the most difficult things in life to learn. But as soon as we learn to love ourselves we can begin to share that gratitude with others who are fighting their own battles (I'm currently recovering from a severe and potentially permanent back injury). As a yoga instructor I try to practice as much compassion in my life as possible, and that includes eating a vegetarian diet. It is easier on the planet and leaves more resources available so more people can have food to eat. At first it was very difficult transitioning to a plant-based diet, and many people still joke how I used to be a total carnivore. But vegetarianism, veganism, and knowledge of the practices of how we raise food in this country are quickly becoming more widely viewed by the public.
Speaking of food, it's one of the things I love! Green smoothies, baked oatmeal, fruit, pie, if it's plant-based I'll eat it and I can't wait to share some of my favorites with you! My job working in the film industry keeps me very busy so I'll be posting lots of easy-to-make meals that travel well and can be frozen for future consumption.
It is my hope that you'll join me on this crazy little journey called life, and maybe also try the benefits of a plant-based life for yourself, whether your a long-term herbivore, a newbie (like me), or just trying out Meatless Monday. Welcome, welcome.
